Spice Up Your Life

Do you love spicy food? We do. And if we love spicy food, why not love a spicy cocktail?

You can make this cocktail as spicy as you'd like, or if you are particularly bad with spice, you don't need to add it at all, but... then it kind of ruins the whole point of this cocktail.

Before you mix up your cocktail you will have to infuse some heat into your amaro. "What is amaro?" You ask. originating in Italy, Amaro is a classification of liqueur, defined for it bitterness combined with sweet. They tend to be very herbal and/or citrus forward. For this recipe we recommend light & citrus-forward amari such as Aperol, Amaro Nonino, or Vecchio Amaro del capo.

Amaro infusion:

For 5 oz of your amaro, add 1 cut up thai chili. Steep for approximately 10 minutes. The time you steep the chili determines how spicy the drink will be. Less is less and more is more. Strain out all the bits!

The cocktail:

1-1/2 oz Aquavit

3/4 oz Thai Chili infused Amaro

1/2 oz Lime juice

1 oz Grapefruit juice

3/4 oz Simple Syrup

2 oz club soda

Add all the ingredients, except the soda, and shake in a shaker tin with ice. Strain into a tall Collins glass with ice. Top up with soda water, and then garnish with a grapefruit slice.

Drink hack: Combine the grapefruit juice, simple syrup and soda water into one ingredient by replacing all three with 3 oz of Grapefruit Soda pop.
