a Pina colada made with aquavit! Yes we dared, and yes, it's an absolute winner. Honestly, no offence to people who enjoy white rum, but our version of the Pina Colada is way better than the original white rum recipe.
For the most ideal version of this recipe, you will need crushed ice or a blender. However, if you have either, this drink still works great with regular ice cubes.
To make crushed ice at home, you need a wooden mallet (Rubber might also suffice), and a cloth bag that you don't mind ruining. There are special crushed ice bags called a 'Lewis bag' if you're feeling fancy and want to get yourself one of those. Just stick your ice cubes in the bag and smash away with your mallet. Bada bing, you've got crushed ice.
You will also need to make your own coconut syrup. But all your hard work will be worth it once you have one of these in your mouth.
The Cocktail:
2 oz Vinland Aquavit
1.5 oz pineapple juice
1.5 oz coconut syrup
3/4 oz fresh lime juice
Dash of Angostura bitters
There are two methods to consider:
1. With a blender: Combine all the ingredients into your blender with a cup of ice. Blend it so all the ice gets crushed up. Pour into your tall glass.
2. With a Shaker: Combine all ingredients into a shaker tin with ice, and shaker vigorously. Strain into a tall glass, then add crushed or regular ice.
Garnish with a chunk of pineapple, a straw and whatever else you like to spruce up your drink.
Coconut Syrup:
1 cup of coconut cream
1 cup of sugar
1/8 tsp of salt
Heat up coconut cream in a pot until steaming. Add sugar and salt. Stir and bring liquid to a simmer. Sanitize a jar or bottle with boiling water or sanitizing solution. Transfer the hot coconut syrup until your sanitized vessel. Put in fridge to cool before use.
IF YOUR SYRUP SEPARATES WHEN COLD, don't worry. Warm it up in the microwave and give it a good stir. If the syrup is a little warm when you use it, it won't affect the drink.
